Ham & Cheese Quiche + Ramblings

Wow.. it has been AGES since I updated anything on this site. My attention has shifted from baking to beauty in the past few months, mainly influenced by colleagues. They know so many deals and always invited me to beauty workshops, events and sales. So far, the ones I remembered that I went to were the Shiseido Sale, Laneige Workshop, Estee Lauder Makeover @ Sephora ION, RMK Makeover, Dior Christmas event. All very cool, especially those makeover ones.. I’ve never seen myself in full makeup so it was quite an ‘enlightening’ experience. I also got into skin care – using better products than the minimalist MUJI brand I’ve been using previously. So far I’ve noted significant difference with my skin – smaller pores, lesser redness and break outs.

I ended my baking hiatus during Christmas because I knew I definitely had to bake something for Christmas gathering with friends. Somehow, I didn’t feel like going the sweet route so I went for savory – thus this ham & cheese quiche! I used to be really afraid of making pastries involving cutting cold butter into flour, like pie crusts. Imagine in Singapore’s weather! I imagine everything will melt really quickly. But I think I’ve conquered it this time. The trick is to use FROZEN cubed butter and use a pastry scraper to cut the butter. The butter took sooooooooo long to melt when I used this method. The quiche was really not bad except I made the crust a tad too thick and forgot to add salt in the crust.

Looking back this year, I think I had a good year. Work-wise, I had great colleagues that I could get along with. Family-wise, we have good relationships and put in effort to meet and bond. Friends-wise, I’m still in touch with them and really excited that some of them are getting married in 2017! Personally, I feel like I improved myself too. I was inspired by vegan Youtubers like Freelee the banana girl (I know, she’s quite a controversial figure) to eat healthy. I am not a vegan but knowing the terrible things animals go through and the effect of factory farming on our planet, I’m actively reducing my meat intake and eating more plants & carbs. I guess this made me healthier and I lost about 7 kg eating less meat and exercising ever so slightly more.

For 2017, I plan to go on with the healthier lifestyle and even exercising more to get better results. I’ll still continue to bake, learn more things and maintain relationships with my loved ones to make the upcoming year fruitful and fulfilling. This hashtag is so overused but I really do think it applies to my life: #blessed.

Mini Apple Pie

I was very excited to make Dan Lepard’s sweet rough puff pastry, a recipe from his book “Short and Sweet”. So I made apple pie filling and the pastry carefully and wrapped each pie. After wrapping the pies, I placed them in the freezer to harden for a while and I set the oven to preheat.


My oven’s not working. It tripped the whole house’s electricity after reaching about 90 degrees Celsius.

So these pies have to stay in the freezer until I get a new oven pronto. I got a new microwave oven after one week and used these frozen apple pies to test it out.

They baked up beautifully right? Look at what the egg white wash did to the crust- bubbly and golden glorious crust. I was ecstatic.

One bite into one pie and OMG again- it’s soggy! The unbaked crust had turned soggy in the freezer with the apple pie filling. The pies look pretty but the texture of the pastry.. ugh.

Lesson learnt: I should preheat/ check the oven every time before I start baking anything. 😦
