It was a long time ago since I baked these muffins! Perhaps about 1.5 months ago? I was quite lazy to post these up here. Every time I decide to bake something banana flavoured, it’s because there are overripe bananas at home. I was starting out trying to bake some chocolate cake/ muffin and I spotted these bananas lying on the counter, skin soft and speckled with brown spots. I might as well use those too.
In this 1.5 months, I was looking for jobs, learning to drive and playing around- making the maximum out of my free time. Free time = unemployed. I am officially considered unemployed after 16 July 2013 when the commencement ceremony for my faculty was held. Despite being unemployed since coming back from my grad trip in Korea (about 2 months now!), I do try not to rush into getting a job and I will definitely accept a job only when I feel like I will like the job scope. I don’t want to end up like people who hate their jobs and dread the coming of each day.
Anyway, back to these muffins, I got the recipe from the classic JoyofBaking website! I did make some adaptations to it:-
- using double action baking powder
- 1 egg only (added in some milk)
- oil instead of butter
Because these are all I have at home! I didn’t want to go to the grocery store to buy butter or eggs.. because I have pretty good substitutes anyway.
Gosh.. The picture is so blurry. I really need to invest in a better camera. Sometimes my iPhone’s camera works better than my actual camera. T.T Back to the muffins, they actually taste pretty good!
